Lemon Balm Tea

Lemon balm is delicate and can turn bitter if it's scalded by hot water or if it wasn't dried properly. This is why commercial tea bags (of many types of herbs or tea) can taste old, bitter, or blah, and need sweetener. You'll be bitter or blah too, if you don't age well. Follow the instructions on the package if you want to experience a lovely lemony wisp drift through your mouth. Lemon balm has many health benefits and makes a refreshing iced tea as well!
